Essentially they are gonna perform the same, do get the one that fits your hand the best.
I did, and ended up with the P30L.
Still going after a 9mm. USP Combat Competition though!

Accuracy is a wash, both have nice sight radii and similar bore axis. My recommendation would be to go with the USP9 because you have the option of getting the match trigger installed. IMHO, it's worth the effort/bucks. Moreover, with the fullsize USP, the recoil reduction system works like a charm, very sweet to shoot.
As nice as the P30 and P30L are, I never could warm up to their triggers. In fact, I ended up trading my P30 towards another P7M8. All the USPs I have left all have match triggers and they are a joy to shoot. For me, the Hogue Handall slip-on grips closed the gap between these two guns concerning ergonomics. So, because of the trigger alone, I was always able to shoot my USPs more accurately than my P30. (Although Bill could help you out in this area should you go with the P30L)
The one I added a tactical light to, I just went with the Insight UTL M2 which was made for the USP.
Below is a pic of my USP9 Combat Competition. You could easily modify your fullsize USP9 to look, shoot and perform like this gun should you so desire. (This one has a Match/LEM trigger set up.) Good luck and happy shooting!
