I use Radmin - Remote Administrator. It's much faster than PCAnywhere, can transfer files, restart or shutdown your home PC, or full remote control.
The only thing that would show up in an admins logs are an outbound connection to your home IP address. But you could still get caught if they use screen capture spyware.
Whether or not you want to use something like that depends on what kind of trouble you'd get into.
Take your network admin out for a beer, or better yet, find one that's interested in shooting and take them out sometime. Maybe you could get one to grant you an exception.
