The HK21E and HK23E were made at least until 2001, but not the HK11-series. Would someone know when production of these weapons ceased? Many thanks!

Cheers

This is a difficult question to answer accurately but I have an accurate answer (if that makes sense).
In the early 2000's HK GmbH was desperately trying to get out of making the roller-locked HK's. Too time consuming to make and ammo sensitive. Thus the G36, UMP, MG4, etc. At more than one point they told the current HK21/11E users to place their last order as that would be the last run. Some users did, most didn't - many came back later saying we need XX number. HK made at least 3 small batches (< 50 units) that I know of for US users but mostly by hand and with special QA attn from the "21 Meisters" still working there (very few mind you - 2 come to mind - all others were retired after 40+ years with HK GmbH!). As the HK21E is an HK11E (receiver wise, just different add on parts installed and receiver engraving) HK21/11E receivers were being made after 2001 and then marked as needed for the order. Meaning HK GmbH still had or made the necessary parts for assembling some HK21E's and HK11E's and box-feed kits so the answer to your question is yes, some guns/some components were built/still available after 2001. I recall a last order in @ 2004/5. But ask HK officially and they will likely say not since 19_ _ (were they available for new customers).
